Priyanka shared this in the family group chat, made specially for Tara: a perfectly fried egg dressed up as a flower, with black olives arranged as petals around the sunny yolk and a sprig of fresh dill as the stem. It is the kind of breakfast that makes someone feel looked after before they have even picked up a fork.
Ingredients
- 1 tsp Olive oil, light, for frying
- 1 Large free-range egg
- 8 Black olives, pitted, patted dry
- 2 Fresh dill sprigs, to garnish
- Freshly ground black pepper, to taste
Instructions
Place a small non-stick frying pan over a medium-low heat and add the olive oil, swirling to coat the base evenly.
Once the oil is warm and shimmering, crack the egg carefully into the centre of the pan so the yolk stays intact.
Cook undisturbed for 2 to 3 minutes, until the white is fully set but the yolk is still soft and glossy.
Slide the egg onto a white plate, then immediately arrange the black olives in a ring around the yolk to form the petals of a flower.
Tuck the dill sprigs beneath the olive ring so the feathery fronds fan out downward like a stem and leaves.
Finish with a little freshly ground black pepper and serve straight away.
