Ingredients
- 600 g Skinless chicken breast fillets
- 1 Bay leaf
- 4 Celery sticks, finely sliced
- 4 Spring onions, finely sliced
- 20 g Fresh flat-leaf parsley, roughly chopped
- 3 tbsp Light mayonnaise
- 3 tbsp Low-fat Greek yoghurt
- 1 tsp Dijon mustard
- 1 Lemon, juice only
- Salt and freshly ground black pepper, to taste

Place the chicken breasts in a saucepan with the bay leaf and enough cold water to cover. Bring to the boil, then reduce the heat and simmer gently for 18 to 20 minutes until cooked through with no pink remaining.
Remove the chicken from the pan and set aside to cool for at least 10 minutes. Discard the bay leaf and cooking water.
While the chicken cools, combine the light mayonnaise, Greek yoghurt, Dijon mustard and lemon juice in a large glass bowl. Stir well and season with a little salt and black pepper.
Once cool enough to handle, chop or shred the chicken into bite-sized pieces and add to the bowl.
Add the sliced celery, spring onions and chopped parsley, then fold everything together until the chicken is evenly coated in the dressing.
Taste and adjust the seasoning if needed. Serve straight away or cover and refrigerate for up to two days.
